Analisis Kepatuhan Penerapan Prinsip Halal Oleh Usaha Produk Abon Ikan Kelompok Kembang Dahlia di Kabupaten Kepulauan Selayar

This study aims to describe compliance with halal principles in Kembang Dahlia Fish Floss UMKM in Selayar Islands Regency and to analyze the challenges faced in their implementation. This research employed a qualitative case study approach. Data were collected through observation and in-depth interviews with eight informants, consisting of the UMKM owner and representatives of supporting institutions. The results show that Kembang Dahlia Fish Floss UMKM has implemented halal principles from raw material selection to product packaging. The fish used as raw material is halal and obtained from clear sources, while the production and packaging processes have considered hygiene and food safety aspects. However, the implementation of halal and thayyib principles has not been fully consistent, particularly regarding sanitation, the use of personal protective equipment, and documentation of standard operating procedures. The challenges identified include limited regional regulations, lack of structured assistance, limited production facilities, weak cross-sectoral coordination, and a suboptimal monitoring system.
